1. Thread fin fish popularly known as Indian salmon or Rawas is a fish mainly found in the muddy bottoms and on the coasts of Gujarat and Maharashtra. With its mild flavor and moist pink to orange meat it is favourite among the chefs and is often used in European dishes. It is great for grilling, pan searing and can be used in a curry. Cubes cut is lso known as the ‘Supreme Cut’, this cut is often also referred as ‘Fillet’. It is the prime cut of the fish and is always boneless and without the skin. Cubes are also called ‘Pavé’ meaning a slab or block. This cut can be grilled, crumbed, batter fried, pan fried and is also used in a curry.
